Well I ended up coming back from Albuquerque with a load of peaches from my Grandmother’s peach tree. They are so delicious. I had so many I didn’t know what to do with all of them. I froze some, ate some, chopped some up for a fruit salad, and I also made this delicious cake. It is a Peach Cherry Upside Down Cake. I’ve never made an upside down cake, but I love Pineapple Upside Down cake, so I thought I’d give this a whirl. First you cream butter and sugar and spread it on the bottom of the pan. Then you put the peach halves cut side down.
Then you add the cherries in between the peaches.
Then you pour the cake batter in, which was very simple, except that apparently I didn’t have enough eggs and had to make a run to the store mid batter mixing. The end result is a beautiful and delicious cake. Yummy! Thanks for the peaches Grandma!

Sure glad that you were able to take some of the peaches home, and enjoyed them. The cake looks yummy. What kind of cherries did you use with them? I have been peeling some, and keeping them in the fridge with lemon juice to keep them from browning too much. I want to make another batch of jam, but hoping it will cool down a little before I have to use the canner. It really heats up the kitchen, and it has really been hot here this week. Guess I should have gotten up before sunrise and cooked them. Hope today will be cooler, and I can get them done. Have a wonderful Friday and weekend.
